My Mother
and I would go out in the Spring
When the Robin and Bluebird would joyfully sing.
Looking over the lawn, with eyes sharply keen
Searching for the wonderful dandelion greens.
Along the sloping lawn we'd happily look,
On past the house and down by the brook.
Talking, laughing, having a good time.
As we bent to pick tasty dandelions.
What a salad they'd make! Oh, so fine!
The new tender green of the Dandelion.
With oil and bacon, potato and egg
In an old yellow crock-more and more we'd beg!
Winter was over, Spring here at last.
The cold days and long nights finally past.
For fresh spinach salad our hearts did yearn
But until then, to dandelions we'd turn.
The salad she made that night was the best.
We would eat our fill and have a good rest.
The simplest things were the best to be seen
As we'd go out to gather the dandelion greens.
