Potatoe Bread



2 cakes yeast
1 1/2 c. lukewarm water
2/3 c. sugar
1 1/2 tsp. salt
2/3 c. shortening, melted
1 c. lukewarm potatoes, mashed
2 eggs, beaten
6 c. flour, sifted

Dissolve yeast in 1/2 cup lukewarm water and set aside.
In a large mixing bowl, put 1 cup lukewarm water, sugar, salt, shortening, mashed potatoes and beaten eggs.
Mix well.
 Add dissolved yeast and mix again.
Stir in flour to make a soft dough.
Cover and place in refrigerator for two hours.
Take out and make into rolls.
Place on ungreased baking sheet in a warm place for two or three hours.
Bake at 400 degrees about 20 minutes or until golden brown.
To freeze rolls, place dough in the refrigerator two hours as directed.
Remove, shape into rolls and freeze.
Yields about 5 dozen.
